As soon as I hear the word leftovers my taste buds are saddened. Leftovers never sound exciting, but when the fridge is full of them, someone has to eat them. Last night I didn't feel like cooking so I just pulled out our random leftovers. Not the Sunday supper most of us imagine.
"We're having a buffet for dinner!" I announced. My kids love eating at our local Chinese buffet. They enjoy all the different choices and they can tasted a little bit of everything. As soon as I called dinner a buffet, their lips were smacking and they couldn't wait to eat.
We had roasted chicken and taters, kale slaw with my sesame chili lime dressing, mashed potatoes, steamed veggies, takeout chicken tenders, pasta, and sausage kale soup. Whew! I just added a fresh salad and a store bought challah to round out dinner.
Funny how a little spin on something most of us dread can make dinner so exciting. The kids' only complaint was that they didn't have enough space on their plate for everything they wanted to eat.
A win-win for everyone!
