Grilled Peanut Butter, Banana, and Honey Sandwiches


Peanut butter sandwiches are serious business in our family. Each person has their preferred way of making and eating them. Even the kids. Sophia likes her sandwiches to only contain peanut butter. Recently she's started to enjoy a little honey swirled in hers. My husband prefers the cheap gloppy grape jelly in his PB&J. Once I bought the good grape jam and he refused to put it in his PB& J. At least my toddler will eat any kind of peanut butter sandwich. As long as it isn't his. Because yours looks better.

My favorite kind of peanut butter sandwich? Either PB with honey or PB with sliced bananas. Or just a piece of toast smeared with PB while the toast is still warm. Everyone in the family was skeptical when I wanted to try the Grilled PB, Banana, and Honey sandwich from Emeril's Kicked-Up Sandwiches: Stacked with Flavor.


I was game. The sandwich reminded me of my college roommate. She loved her electric sandwich maker, which we weren't supposed to have in our dorm room. Remember them? She would coat a slice of white bread with peanut butter, add chocolate chips on top, add the second slice of bread and toast it in the sandwich maker. It was pure decadence.

Back to the peanut butter, banana, and honey sandwich, or PBBH for short. This sandwich is a bit more elegant than my old roomie's contraband sandwiches. I grilled it on the stovetop with a bit of butter. Yes, butter. Emeril told me to use butter.

It was a seriously good sandwich. I paired it with a glass of cold milk and carrot sticks. The peanut butter was slightly gooey, the banana started to melt. Nom nom nom.

You gotta make this sandwich. PBBH rules.
