Smoking Paprika and Pork Butt


A few weeks ago, I caught a really good deal on pork roast and pork tenderloin. I froze most of it, but now needed to figure out to do with it. I did a bit of research through my cookbooks and then the internet. Usually I search the internet first. I figured my cookbooks were getting dusty so I should at least thumb through the indices.

Then I found the pork shoulder roast with tomatoes recipe on Martha Stewart's site. It was perfect. I had the cherry tomatoes from my CSA and a bag of smoked paprika I inherited from my sister last year. I don't keep red wine vinegar in my pantry, but balsamic vinegar did great in a pinch.

This recipe took a bit of time to brown the roast, but once I added all the ingredients, the oven did the rest. Plus look how gorgeous it looks with red paprika!


I've made this dish twice and it's passed the kid test both times! Sophia, my girl who doesn't like tomato based sauces, asked for seconds. And thirds. And fourths. Jaxson gobbled it up too!

I served mashed potatoes made from my CSA and a sauteed squash. Let me just say, thank goodness I'm not getting any squash this week!
