CSA Week 4: Squash Overload!
This week's CSA brings a plethora of yellow squash. Eight of them. I roasted 3 of them over the weekend with some carrots and potatoes. Now what? I'm going out of town soon so I have to do something with them. I know hubby won't be doing very much cooking while I'm gone. Unless you count cooking some fancy ramen for dinner.
I made short work the cabbage. Along with the head from last week, I made two large jars of fridge pickles. the half a head that was left roasted with the squash and blackened chicken.
Aren't those little beets cute? I'm assuming that I got them for the greens and not the actual roots.
While I'm gone hubby will pick up the CSA, but I'm not going for force him to take photos of it. So I'll report back in a couple of weeks!
