After three days of rain, I'm ready for some sun. Luckily we're expecting some sunny days this weekend. I'm taking the ideas I learned from Chef George Duran's class on The Motherhood last week and making some good picnic munchies. He made the Greek pasta salad above. It's non-mayo based so you don't have to worry about leaving it out in the sun, except for the feta cheese but you add that at the last minute.
He made a Caesar salad and wrapped it in a spring roll wrapper so you can eat the salad in one hand. How cool is that? Check out the video for directions or you can find more picnic friendly recipes on ReadySetEat.
In the video he tells you to dry off the spring wrapper with a paper towel. Don't do that. We Vietnamese people never do that. You'll look like a beginner. (I tease.) The secret is to just dip the wrapper in the water long enough to coat it. Then set it on plate and wait 10 seconds. You'll have a perfectly moistened spring roll wrapper. Trust me, I've been doing this since I was 7 years old.
